The word savory or savoury has a number of meanings:

  • Savory is an herb of the genus Satureja, commonly used to flavor beans and turkey stuffing
  • Savory (also called umami) is one of the the basic taste sensations, produced by the free glutamates commonly found in fermented and aged foods. It is considered the fifth primary taste.
  • A savory dish or course in a meal, in some cookbooks, as well as in the British and Commonwealth countries, is one that is not sweet.
